Lavender Lemonade Recipe -Fresh, Floral, and Perfect for Summer

There are a few moments each year that make it feel like summer has officially arrived on the farm.

One of them is when my neighbor — who splits her time between here in Colorado and California — shows up with a bag of lemons from her garden in California. The first time she brought them over I was completely spoiled. There is truly nothing like lemons picked straight from someone's tree. They’re fragrant, incredibly juicy, and brighter than anything you can buy at the grocery store.

Whenever those lemons appear, we celebrate the only way that makes sense: we make our favorite lavender lemonade of the year.

Lavender lemonade is one of those drinks that feels both refreshing and a little bit magical. The tart brightness of lemon paired with the soft floral flavor of lavender creates something completely unique — the kind of drink people try once and then immediately ask how it’s made.

Personally, I lean toward the tart side when making lemonade. I love that sharp citrus brightness balanced by just enough lavender sweetness to soften it. It keeps the drink refreshing and lets the lavender stay elegant rather than overly sweet.

It’s also become a bit of a tradition here on the farm. Each year when we host our Lavender Planting 101 Workshop in May, making lavender lemonade is part of how we kick off the season.

This workshop is a special day where we gather on the farm to teach people how to successfully grow lavender in our high-desert climate. We talk about soil preparation, planting techniques, spacing, irrigation, and the specific varieties that thrive in Southwest Colorado. It’s a hands-on learning experience where people walk away with the confidence to plant lavender at home.

And welcoming everyone with a glass of lavender lemonade just feels like the perfect way to start.

Start with Lavender Simple Syrup

The secret to great lavender lemonade is starting with lavender simple syrup.

Simple syrup allows the lavender flavor to blend smoothly into the lemonade instead of leaving floating buds or uneven flavor.

Once you have syrup ready, the lemonade itself comes together quickly.

Lavender Lemonade Recipe

This recipe makes about 4 servings.

Ingredients

• 1 cup fresh lemon juice (about 4–6 lemons)
• 3–4 cups cold water
• ¼–½ cup lavender simple syrup
• Ice

Optional additions:

• fresh peppermint
• fresh spearmint
• lemon balm
• lemon slices for garnish

Seasonal farm addition:

• a few local sumac berries for a natural vitamin C boost and a beautiful tangy flavor

Instructions

  1. In a pitcher, combine the fresh lemon juice and cold water.

  2. Add lavender simple syrup, starting with ¼ cup, then taste and adjust depending on how sweet or floral you like it.

  3. Stir well until everything is fully combined.

  4. Add ice and fresh herbs if desired.

  5. Serve chilled and enjoy.

Adjusting the Flavor to Your Taste

One of the joys of lavender lemonade is that you can easily adjust it depending on what you prefer.

For stronger lavender flavor

Add a little more lavender simple syrup.

For a more tart lemonade

Add extra fresh lemon juice. This is my favorite way to drink it because the bright citrus really lets the lavender shine.

For a sweeter lemonade

Add additional syrup or a small spoonful of honey.

For a lighter summer drink

Replace some of the water with sparkling water for a bubbly version.

Fresh Herbs That Make It Even Better

On the farm we often take lavender lemonade one step further by adding herbs from the garden.

Peppermint

Peppermint adds a refreshing cooling note that pairs beautifully with lavender.

Spearmint

Spearmint is slightly sweeter and softer than peppermint and blends beautifully with citrus drinks.

Lemon Balm

Sometimes I sneak a little lemon balm into the pitcher. Lemon balm has long been valued in herbal traditions for its calming and uplifting qualities, and its gentle lemony flavor fits perfectly in lemonade.

Local Sumac

When the season is right, we also add a pinch of local sumac.

Sumac has a naturally tart flavor and is packed with vitamin C, so it gives the lemonade an extra nutritional boost while deepening that bright citrus taste.

A Little Farm Trick

When we’re making lavender lemonade for gatherings on the farm, we often lightly clap the herbs between our hands before adding them to the pitcher.

This releases the essential oils in the leaves and deepens the flavor of the drink.

It’s a simple trick, but it makes a noticeable difference.

From the Field to Your Glass

One of my favorite things about lavender lemonade is how beautifully it represents what we grow here.

The lavender comes from the same fields people walk through during bloom season. The herbs are often picked fresh from the garden. And when we’re lucky, the lemons come from a friend’s backyard tree.

It’s a drink that brings together plants, people, and place.

And every year when we make it for our first workshop of the season, it feels like a little celebration of summer arriving.

If you make lavender lemonade at home, don’t be afraid to experiment.

Add herbs from your garden, adjust the sweetness or tartness, or try sparkling water for a bubbly version. Small variations can bring out different notes in the lavender.
